Module 1 - Introduction to Food Safety

The importance of adopting a proactive approach to food safety is discussed in the first module, discussing who takes responsibility for food safety and how inadequate food safety can have devastating consequences.  Learners are presented with the fundamentals of food safety, along with a series of potential risks that can jeopardise the safety of food products.

Module 2 - What is Food Hygiene?

An introduction to the concept of the ‘food poisoning chain’ follows in the second module, which examines the links between substandard hygiene and elevated food poisoning risk.  Candidates also consider the importance of good personal hygiene standards, along with the various contamination risks that pose a threat to food products prior to consumption.

Module 3 - The 4Cs of Food Hygiene

The course concludes with a detailed look at the ‘4Cs’ food hygiene methodology, in which candidates learn how food safety standards are reliant on adequate cleaning, cooking, chilling and cross-contamination prevention.  Several sample cooking temperatures and times for specific food products are also provided, to ensure they are safe to consume
