Course Syllabus

Our self-paced courses prioritise flexibility and accessibility for the learner’s benefit. This endorsed Level 2 Food Hygiene and Safety Certificate takes place over a series of six modules, covering a variety of essential topics as outlined below:


Module 1 - Introduction to Food Safety

The fundamentals of effective food hygiene are presented and discussed in the first module, with a look at who takes responsibility for food safety and the importance of maintaining the highest possible standards.  Candidates are also presented with a brief overview of the recent history of food safety and how food safety standards differ internationally.


Module 2 - What is Food Hygiene?

Module Two turns attention to food hygiene, covering the basic principles of good hygiene in the workplace and the consequences associated with lapses in hygiene.  The connection between food poisoning and hygiene issues is also examined, along with the concept of the ‘food poisoning chain’ and how to break it.


Module Two shifts focus to food hygiene, examining what it means to handle food in a hygienic way and discussing the risks associated with poor hygiene.  The potential for hygiene issues to result in food poisoning is also discussed, along with an introduction to the six main steps involved in breaking the ‘food poisoning chain’.


Module 3 - The 4Cs of Food Hygiene

A more detailed look at the correlation between hygiene and food safety follows in the third module, including a breakdown of the ‘4Cs’ of food hygiene.  The importance of effective cleaning, cooking, chilling and cross-contamination prevention is examined, along with guideline temperatures for heating food to ensure it is safe to consume.


Module 4 - Food Handling & Food Storage

Module Four continues with further insights into cooking times and temperatures for safe consumption, along with how to chill foods and hold foods at safe temperatures for certain periods of time.  Several examples of potentially hazardous foods are also brought into discussion, along with how to determine if a product is spoiled. 


Module 5 - Packaging and Labelling

All key information that must be included on a food product’s packaging is detailed and discussed in Module Five.  Candidates consider the legal aspects of packaging and labelling, who takes responsibility for providing the necessary disclosure and the information needed to present a clear and acceptable nutritional declaration.


Module 6 - Transporting Food Safely

Concluding the course, Module Six discusses the safe and hygienic transportation of different types of food products.  The risk of cross-contamination is brought back into discussion, along with temperature controls when transporting perishable foods and other considerations in relation to the chosen mode of transportation.
